Potato soup
Ingredients (approx. 4-5 servings)

- | Vegetable broth |
- | Potatoes |
- | Salt |
- | Pepper |
- | Thyme |
- | Cumin |
Preparation
- peel and dice as many potatoes until the pot is 1/2 - 3/4 full.
- peel and dice the celery, onions and carrots and add to the pot.
- Fill the pot with water and bring to a boil.
- leek cut into slices.
- add vegetable broth, thyme and cumin to taste and after about 5 min add the leek and cook for about 10 min.
- chop the parsley and add to the pot and simmer for a few more minutes.
