Lemon cake (Herbivore)

Ingredients

250 mlPlant based milk
100 gNeutral oil
75 mlLemon juice
1Lemon zest
150 gPowdered sugar

Preparation

  1. preheat oven to 180 C° top/bottom heat (convection oven: 160 C°).
  2. line a loaf pan with baking paper or grease it.
  3. preheat oven to 180 °C (upper-lower heat).
  4. 300 g flour, 200 g sugar, 1 pkg baking powder, 1 cup vanilla sugar and grated lemon zest in a bowl. Mix well.
  5. now add 250 ml plant based milk, 100 g neutral oil and 50 ml lemon juice and mix again.
  6. now pour batter into the prepared loaf pan.
  7. Bake for 60 minutes and leave to cool in the mold.
  8. Mix 150 g powdered sugar with it 2 tablespoons lemon juice and spread on the cake.
