Lemon cake (Herbivore)

250 ml | Plant based milk |
100 g | Neutral oil |
75 ml | Lemon juice |
1 | Lemon zest |
150 g | Powdered sugar |
Preparation
- preheat oven to 180 C° top/bottom heat (convection oven: 160 C°).
- line a loaf pan with baking paper or grease it.
- preheat oven to 180 °C (upper-lower heat).
- 300 g flour, 200 g sugar, 1 pkg baking powder, 1 cup vanilla sugar and grated lemon zest in a bowl. Mix well.
- now add 250 ml plant based milk, 100 g neutral oil and 50 ml lemon juice and mix again.
- now pour batter into the prepared loaf pan.
- Bake for 60 minutes and leave to cool in the mold.
- Mix 150 g powdered sugar with it 2 tablespoons lemon juice and spread on the cake.
