Apple pie (Herbivore)

Preparation
- Mix 300 g flour with 200 g sugar, 1/2 tsp cinnamon and 1 pinch salt in a bowl. Add 180 g cold vegetable margarine and quickly knead into a smooth dough and chill wrapped in foil for at least 30 minutes.
- Squeeze 1/2 lemon. Peel, halve and quarter 1200g of apples. Remove the core and cut the fruit into pieces of about 2-3 cm, mix with lemon juice.
- 50 g sugar in a saucepan to caramelize.
- add apple cubes and 100 ml water and simmer for 4 minutes.
- Stir 2 tbsp. starch with 1 pkg. vanilla sugar and 2 tbsp. water until smooth and add. Allow apple mixture to thicken while stirring. Set aside.
- Preheat oven to 180 CĀ° (convection oven: 160 CĀ°). Grease the springform pan (Ć 26 cm). Pour 2/3 of the dough into the greased pan and press down. Form a rim about 3 cm high. Spread warm apple mixture on top. From the remaining shortcrust pastry pick crumbles and spread over the apple mixture.
- Bake the cake for about 55 minutes. Let cool completely on a cooling rack. Leave to cool for at least 2 hours. Serve with vegan whipped cream if desired.
